PURE SINGLE RUM

We launched Ninefold in 2019 with our signature Pure Single Rum, and proudly built an enviable reputation over 18 months of trading only with an unaged (aka ‘white’) rum. Why the name? ‘Pure’ signifies a traditionally pot distilled rum, ‘Single’ having the same meaning as a single malt i.e. single distillery product, and ‘Rum’ meaning…well…rum!

Distilled from scratch using cane molasses at Dormont Home Farm, we originally bottled at 40% ABV but with our new bottle relaunch we took the opportunity to bump the strength to a tongue tingling 46%. Full of flavour, with a luxurious creamy mouthfeel, our unaged rum is an easy going drink either with ice, mixed with pineapple juice or coke, or as a great base for delicious cocktails. Dormont Spiced

Spiced rum is where it’s at right now in the UK. Launched in early 2021, Dormont Spiced is our own unique take on the spirit drink category! We use our own Pure Single Rum as the base, and lightly spice with natural flavour extracts of allspice, nutmeg and anise. A small amount of Fair Trade cane caster sugar (15 grams per litre) is used to round out the flavours, and the beautiful golden colour comes from a little caramel.

Bottled in-house at 40%, Dormont Spiced is a dry style, sophisticated and well balanced drink that works best either taken neat, or mixed with lemonade, cloudy apple juice, or tonic water. A perfect long drink in the summer with ice, or a warming drink in the longer months. Why not try out our Rabbit Ear Punch cocktail as an alternative to mulled wine?

Cask Aged Pure Single Rum

Single cask rums from the distillery have brought many fans to Ninefold, with one notable industry professional describing our last single cask release as “the best UK aged rum I’ve had by far”. Single casks though are rare and intermittent by their nature, and all the more special for it, however we have just launched what is the start of a regular core offering of aged rum.

Barrel aged on site here at the distillery, our Pure Single Rum has been matured in American oak standard barrels for at least one year. You can check exactly what barrels have contributed to each batch by scanning the QR code on the back label, or by going to our Casks page. We believe in transparency and honesty here at Ninefold, so we think this will be great information for everyone.
