pure single rum

The distillery's signature boutique unaged Scottish rum, which forms the base of our other expressions.

46% ABV

  • Our core marque is made from 4-day fermented sugar cane molasses, double distilled on our Scottish handmade copper hybrid pot + column still.

    The second distillation through the 4-plate column results in a 90% ABV rum, which we simply dilute with water over several days down to 46% before resting and bottling.

  • A clean and easy-going rum.

    On the nose the rum has notes of butterscotch, vanilla, banana bread and citrus, and is naturally sweet and fruity on the palate.

    These initial aromas and flavours then give way to a peppery finish.

  • You can go classic with Coca Cola, or try with pineapple for a tropical vibe!

merchant parrot

A strong but gentle overproof unaged pure single rum, bottled at casking proof for full body and deep flavour. Named after Black Parrot and Merchant House bars in London, this is an ode to hospitality and cocktail makers everywhere.

63.5% ABV

  • We redistil the leftover alcohol from our Pure Single Rum distillations (aka the feints), bypassing the column for a straight pot distillation - we call this the ‘Queen’s share’.

    63.5% is the proof that we fill casks at, and Merchant Parrot is an example of some of the rums we make specifically for maturing.

  • A beautiful creamy nose invites in to gentle and joyous notes of heather honey, rosewater, coconut, apricot, toffee and dark chocolate.

  • Perfect with pineapple (4 parts pineapple to rum), or you could try with coconut water to complement the flavours of the rum.

dormont spiced rum

Our OG spiced rum, delicately flavoured with just nutmeg, allspice and aniseed. A little sugar and natural caramel are added to sweeten and round out the spice palate, and to give the rum its beautiful golden colour. Dormont Spiced is a sophisticated dry style of spiced rum.

40% ABV

  • Dormont Spiced begins with our signature easy going Pure Single Rum, to which we add natural extracts of nutmeg, allspice and aniseed.

    We also use 15 grams per litre of cane sugar and some caramel colouring for a little sweetness and beautiful presentation.

  • A dry style of spiced rum, Dormont Spiced has an initial sweetness with a mellow fennel-like aniseed initially, followed by the nutmeg and subtle allspice. Some delicate orange notes on the nose, and a peppery finish, classic to Ninefold rums.

  • We absolutely love Dormont Spiced with cloudy apple juice! A lovely creamy textured drink with lots of spice notes coming through - imagine drinking apple strudel…

celestial spiced rum

Originally made as an exclusive to the Craft Gin Club, Celestial Spiced is a sweet and spice forward spiced rum. Flavoured with allspice, cardamom, cinnamon, clove and kumquat, and sweetened with cane sugar.

40% ABV

  • Complementing our base Pure Single Rum, we add natural extracts of clove, cinnamon, cardamom, allspice and kumquat.

    20 grams per litre of sugar and some caramel (E150a) are also added for some soft sweetness and a beautiful colour in the bottle.

  • Natural sweet vanilla notes on the nose and pronounced zesty kumquat, with balanced clove, cinnamon, cardamom, allspice and a slightly sharp kumquat on the pallet. Very easy drinking.

  • Favourite mixers with Celestial are lemonade or ginger ale, to really bring the spices through while softening the alcohol. Or, like Dormont Spiced, you can try with cloudy apple!

cask aged rum

Our double pot distilled Pure Single Rum matured in virgin American oak. We bottle single casks, so no two bottlings will be the same, and our latest release is now over 2 years old. Non chill-filtered, and we never add sugar or colour to our aged rums.

45% ABV

  • We fill virgin 200 litre American oak standard barrels with our base marque, Pure Single Rum, which is double distilled to 90% and then diluted to 63.5%.

    We select single casks for bottling, so each release will be unique-but-familiar. All of our releases now are over 2 years old.

  • Inviting butterscotch and caramel on the nose, with dried figs, soft brown sugar, cinnamon, ginger, coconut, banana and oak spices on the palate, and our signature peppery finish.

  • A splash of ginger beer makes for a creamy and delicious easy going drink over ice.
