Rabbit Ear Punch

Named after the distillery cat’s more…interesting…presents to us, this hearty punch will warm you up as the nights get longer. Can be served cold, but it’s best when warm.

Ingredients:

  • 4 parts apple juice

  • 3 parts Ninefold rum (any of ours will work!)

  • 2 parts spiced syrup (see below)

  • 1 part freshly squeezed lemon juice

Method:
To serve cold, combine all the ingredients in a bowl for serving, or in a glass of your choice. A slice or two of orange per serving adds a nice citrus note.

To serve warm, combine all the ingredients except the rum in a pot or microwaveable container, heat until it’s warm enough for you (but don’t boil), then add the rum and orange slices, and enjoy!

Spiced syrup
Gently warm 250ml of water over a medium heat, and stir in gradually 250ml of brown sugar until dissolved. This makes a 1:1 sugar syrup. Turn the heat off, add a few cinnamon sticks and a handful of cloves and set aside for at least 30 minutes. Strain off the spices, bottle, and it will store in the fridge for months.
