A + B = Punch

This cocktail, developed by Joe Brayford, riffs off some of the flavours encountered on Dormont Estate: apple, honey and rum. A delicious balance of sweet, dry, sharp tang and boozy rum. Scale up the ingredients to serve at parties!

Ingredients:

  • 50 ml Ninefold Pure Single Rum (unaged)

  • 20 ml dry cider

  • 20 ml apple juice

  • 20 ml honey syrup*

  • 5 ml cider vinegar

Method:
Add all ingredients to a rocks glass, add ice and stir to mix. Alternatively make in advance, chill in the fridge and pour when desired.

A little soda water or fizz will make this drink long for the warm summer days.

Honey syrup

  • 1 part honey

  • 1 part water

Combine honey and water in a small pan, heat to dissolve and bottle for future use.
